Glazed Jam Scones


  • 3 1/2 cups (420g) all-purpose flour
  • 3 tablespoons (38g) sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup (6oz) cold unsalted butter cut into 1-inch pieces
  • 1 1/4 cup buttermilk
  • Jam of choice
Egg Wash
  • 1 egg
  • 1 tablespoon water
  • 1 cup (120g) powdered sugar
  • 1 tablespoon unsalted butter melted
  • 1 to 3 tablespoons milk
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon salt
  1. Preheat your oven to 400°F and cover a baking tray with parchment paper.
  2. In your food processor, combine flour, sugar, baking powder, and salt. Add butter and pulse until butter is cut into the flour mixture and no pieces larger than a pea remain.
  3. Add buttermilk and continue to pulse until mixture begins to clump and forms a sticky dough.
  4. Scrape dough onto a well-floured surface. Dust the top of the dough lightly with flour and pat down to about 3/4-inch thick. Using a 2 1/2-inch biscuit cutter or glass, cut out about 16 rounds, squishing the scraps together and re-flattening as needed.
