Low Carb Keto Loaded Cauliflower Casserole


Ingredients
  • 1 medium head of cauliflower, cut into chunks
  • 1 C. shredded cheddar cheese + extra to sprinkle on top of the casserole
  • 1/4 C. green onion
  • 6 slices of bacon, cooked & diced
  • 1/2 C. sour cream
  • Salt & pepper to taste
Instructions
  1. Preheat oven to 400 degrees and spray a baking dish with non-stick cooking spray.
  2. Roast the cauliflower 20-25 minutes.
  3. Combine all the ingredients and stir into the roasted cauliflower
