Keto, Low Carb and Paleo Chocolate Chip Cookies Recipe


Ingredients
  • 3 eggs
  • 1/2 cup palm shortening or softened butter
  • 1 teaspoon vanilla extract
  • 1/2 tsp teaspoon cinnamon optional
  • 1/2 teaspoon nutmeg optional
  • 1/3 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup almond flour
  • 4-6 ounces unsweetened dark chocolate chopped
Sweetener
  • 3/4 cup Birch xylitol or
  • 3/4 cup Swerve or
  • 2 teaspoon Stevia powder extract
Instructions
  1. Preheat the oven to 350° F.
  2. Mix the eggs, palm shortening or butter, vanilla, cinnamon, nutmeg, and sweetener in a large bowl.
  3. Sift the coconut flour into a small bowl then add the baking soda, salt, and almond flour.
  4. Combine the two mixtures and add the chocolate chunks.
